Rocky Road • 125g golden syrup • 125g unsalted butter • 200g milk chocolate • 200g dark chocolate • 100g mini marshmallows • 250g digestives (I used Lotus biscuits) • 100g glacé cherries • 100g raisins Decoration • 100g white chocolate • 75g unsalted butter • 150g icing sugar • Green food colouring • Red M&Ms How to make it👇🏽 Break up your biscuits and mix with the marshmallows, cherries and raisins. Melt your butter with the golden syrup and then add all of the chocolate and stir until melted. Mix everything together. Fully line a small pudding bowl with cling film and pack in your mixture. Refrigerate for a few hours until set. Tip out onto a board, then top with melted white chocolate.
