Let me teach you how to brisket 💪🏾

1️⃣ Trim your brisket so it’s uniform and even. Remove any silver skin and hard fat as well.
2️⃣ Season it so it’s covered and smothered. Salt and Pepper or SPG or great starting points but any beef rub is fine, I just try to avoid sugar.
3️⃣ Smoke between 250 and 275 until bark has formed. Could be 150 internal could be 170. Just make sure the bark is set. On the hasty bake this takes me about 4 hours. Every smoker is different.
4️⃣ Wrap it with a little liquid to add flavor and moisture. I used foil this time but have used butcher paper as well. Use what you like and works for you.
5️⃣ Place it back on until it’s probe tender. Could be 205, could be 210. This could take 1.5 hours it could take 2.5
6️⃣ Let it rest at least 2 hours before slicing.
