One week until the Big Game, here’s the only Chili recipe you’ll need for game day entertaining, or just a cold winter day. -Dice a red, yellow, and orange bell pepper (I like a medium dice on these, I like the texture that way in a hearty chili), one small yellow onion, and one jalapeño. -In a cold Dutch oven over medium/high heat add about a 1/2 cup of pancetta (you could also use bacon). Render down until very brown and crispy, roughly 8 mins. Remove with a slotted spoon and set aside. -Drizzle a bit of olive oil in the pot with the rendered fat, add one pound of ground beef (I use 1/2 lb of ground sirloin and a 1/2 lb of ground round from my guys over caseys_market). Season liberally with kosher salt. Don’t overcrowd the pot, work in batches if you must, sear until browned beautifully. Add your spice mix; 2 tablespoons chili powder, 1/2 teaspoon black pepper, 1.5 teaspoons cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon dried mustard, 1/4 teaspoon cayenne, ...
