Chicago Squares Week 17: chicagobears 🐻 at 49ers 🔴 Powered by agoramarketchicago 🛒 The NFC North Champion Chicago Bears are in the bay tonight for a Primetime battle with the 49ers and this week's pizza pays homage to San Francisco's famed Chinatown which is the oldest in the country and no dish represents Chinatown better that the staple, peking duck. My pizza version starts out with a scallion pancake dough that gets topped with hoisin, shredded mozzarella, homemade slow roasted peking duck, a touch more mozzerella, and toasted sesame seeds. After a quick bake in my Gozney Arc XL, the pizza is finished with plum sauce, chili oil, thinly sliced cucumbers, crispy duck skin, and thinly sliced scallions. I feel like I say this weekly but holy hell this pizza was incredible. It's a flavor bomb with the fatty crispy duck that pairs beautiful with the savory and sweet sauces, the heat from the chili oil, the freshness of cucumbers and that scallion pancake ties the entire experience...
