The Bears face the Commanders tonight on Monday night football and this week's pizza is inspired by the salvadorian pupusa, an ode to the DC and DMV area's large Salvadoran population, the second largest in the country. Before we make the pizza, I had to make my own mini pupusas stuffed with a combination of Salvadorian chicharron, frijoles, and quesillo cheese along with the traditional salsa roja, and curtido which is a pickled slaw. The pizza starts with a layer of refried beans and is topped with shredded mozzarella and of course the pupusas. After a quick bake in my gozney Arc XL, the pizza is finished the salsa roja and curtido. This one is just delicious and I will safely assume that I am the first person ever to put pupusa's on tavern style pizza but it just works.
