I love the Chicago food scene but they are one thing that we truly lack. Migas tacos specifically are one of my absolute favorite things to make. A super simply taco typically made with onions, peppers, eggs, crumbled tortilla chips, and cheese all scrambled together on fresh flour tortillas. My version uses sautéed white onion, poblano peppers, scrambled eggs, elmilagrotortillasoficial tortilla chips, and chihuahua cheese. It's topped with my giardiniera salsa for some kick, sliced avocado, and it's all atop a fresh flour tortilla made with reserved giardiniera oil tortillas give it all an extra layer of flavor and heat.
