That time I made Spam Mac & Cheese for Chef Ramsay, Blais, and Arrington… Made this in the BASEMENT on Next Level Chef with a can of Spam and a box of mac. No cheese packet. We don’t need it. The play: 🔲 Fine dice the Spam → crisp it up → hit it with gochujang and let it GLAZE 🔲 Small pan: red onion + garlic + sage in butter → half and half → melt in American AND pepper jack until it’s stupid creamy → ranch packet + salt + pepper + lime squeeze 🔲 Boil the noodles, fold into the sauce, stir in the crispy Spam 🔲 Pangrattato is the move — toast whole peanuts, hit em with salt & Tabasco while they’re screaming hot, chop em up, toss with toasted panko + butter + reserved gochujang + lime zest 🔲 Bowl it up.
