Lent begins today and nothing brings me back to my childhood during Lent more than the memory of a Filet o Fish sandwich. This sandwich literally unlocks so many childhood memories for me. My Mom did not eat fast food. But the one thing I do remember her occasionally partaking in was an occasional Filet o Fish sandwich. She loved it. And so did I. And it’s super easy to make your own. All you need is a soft brioche roll which I lightly toasted, yellow American cheese which I melted slightly, a tangy tartar sauce and a simple breaded fish filet. I used cod fish and a breading of seasoned flour (s&p, garlic powder and smoked paprika) beaten egg and seasoned breadcrumbs (I started off with regular breadcrumbs (not panko) and seasoned them myself with s&p). I shallow fried them for just a minute or 2 or so on each side (depending on how thick your fish is) until golden and then assembled the sandwiches. . . Homemade Filet O Fish . .
