Because I haven’t eaten meat or chicken in over 30 years, I’ve always used beans as a solid source of protein. I have also embraced the humble bean as a main character, not a forgettable side dish. Which is what I did here. #Meatless I love butter beans because of their mild, creamy, if not meaty texture. They are a nutrient-dense, plant-based protein source that are incredibly affordable and versatile. This dish was inspired by Sarah liveeatlearn when I saw it come across my explorer page.
