🥞 These oatmeal pancakes are made in the blender with *you guessed it* my BFF cottage cheese. 😂 (Not feeling the cottage cheese trend? I’ve got a recipe for regular oatmeal pancakes on the blog- no cottage cheese needed!) But half a batch of these pancakes contains 15g of protein so it’s a great way to start your day!

Ingredients
1/2 cup cottage cheese
2 eggs
1/2 cup old fashioned oats
1 teaspoon vanilla
2 teaspoons maple syrup
2 teaspoons baking powder

Instructions
Add all the ingredients to a blender or food processor and blend until smooth.
Heat a large non-stick skillet over medium heat. Add the batter in 3 tablespoon portions. Cook until they’re set around the edges.
Flip and continue to cook until golden brown.
