🍯 Honey is famous for its eternal shelf life, with edible samples found in 3,000-year-old Egyptian tombs. This longevity stems from how bees transform plant nectar. Worker bees collect nectar, primarily sucrose, and store it in their honey stomachs. Here, they mix the nectar with unique enzymes that break the sucrose down into simpler sugars: glucose and fructose. Back at the hive, house bees continue this enzymatic process, regurgitating the mixture to break the sugars down even further.
Next, the bees deposit the liquid into the honeycomb. To transform the watery nectar into thick honey, bees rapidly fan the comb with their wings, evaporating the water content from about 70% down to a mere 17%. This dramatic reduction in moisture is crucial to honey's immortality.
