Recipe
Chicken:
- 2 1/2 pounds chicken thighs and drumsticks
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 2 garlic cloves, grated
- 1/4 teaspoon red pepper flakes
- 1 teaspoon oregano
- 1 teaspoon thyme
- Squeeze of lemon juice
In a large bowl, add the chicken and all the ingredients. Mix thoroughly to coat all sides of the chicken.
Transfer the chicken to a baking dish and bake at 425°F for 35-40 minutes, flipping halfway through.
Chickpea:
- 1 (15-ounce) can chickpeas, drained and dried
- 1/2 teaspoon cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 2 tablespoons olive oil
Add all the ingredients to a sheet pan and mix well to coat the chickpeas.
Bake at 425°F for 20-25 minutes.
