After years of working in one of Southern California’s most respected bread programs, Matt and Cheryl of newwavebagel set out to build a neighborhood shop rooted in natural fermentation, thoughtful sourcing, and classic technique. 🥯 New Wave Bagel is an artisan sourdough bagel shop in Encinitas founded by Matt Cardwell and Cheryl Storms, alumni of Wayfarer Bread in La Jolla. Each bagel is naturally leavened and hand-shaped, with a focus on depth of flavor and texture. The menu features a rotating selection of bagels and house-made schmears, alongside seasonal ingredients sourced from local farms and producers whenever possible. The shop is currently expanding with a full kitchen build-out, which will allow for an extended menu including breakfast sandwiches served on their sourdough bagels, as well as additional savory offerings and coffee service.
