Over 15 years ago, I saw Chef Art Smith, who at the time was Oprah’s person chef, make his famous Hummingbird Cake on her show. Apparently it was Oprahs favorite. I was immediately smitten and have been making it ever since. For some reason it reminds me of Spring and always finds its way on my Easter dessert buffet.
Hummingbird Cake is most often thought to be a classic Southern cake, but it more than likely originated in Jamaica where it was called a Doctor Bird Cake. It is a pineapple banana spice cake with cream cheese frosting and topped with pecans.
It tastes similar to banana bread, with the moistness and flavor of a spice-filled carrot cake… without the carrots.

Cake:
3 cups all-purpose flour
2 cups sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 cups chopped ripe bananas
1 cup drained crushed pineapple
1cup vegetable oil
2 large eggs , beaten
1 1/2 tsp vanilla extract
2 cup chopped pecans/divided
