This tasty vegan pasta was *inspired* by cacio e pepe, one of my FAVORITE pasta dishes. 🍝 I wanted to see if I could recreate the flavor without any actual cheese, and I love how this turned out! It's not "real" cacio e pepe (since there isn't any cheese), but it's perfect if you're craving something savory and cheesy. Don't skip on the freshly ground pepper!

Here's the recipe:
12oz whole wheat spaghetti (or your favorite pasta)
3 tablespoons olive oil
1/4 cup nutritional yeast
2 tablespoons raw creamy cashew butter
1 tablespoon miso paste
1/4 teaspoon freshly ground black pepper

Instructions
Cook the pasta according to the package directions.
Reserve 1 ¼ cups pasta cooking water, then drain the pasta.
In the empty pot, add the olive oil, nutritional yeast, cashew butter, miso paste, and 1 cup of pasta water. Whisk together until combined.
Add the pasta and toss until coated. If needed, add the additional ¼ cup of pasta water.
