Colcannon is a traditional Irish potato dish and there are as many colcannon recipes as there are cooks in Ireland☘️ This is how my Mom used to make hers It a mixture of creamy mashed potatoes and usually kale or cabbage. And while this is the perfect side dish for Patrick’s Day, it is delicious year round. . . Colcannon . . 3-4 lbs Yukon Gold potatoes, peeled and cut into 2” pieces Kosher salt Freshly ground black pepper 6 tbls unsalted butter, divided 2 tbls olive oil 2 leeks, sliced in half lengthwise, thinly sliced crosswise 1/2 onion, chopped 3 garlic cloves, chopped 4 cups shredded cabbage 1 cup milk ½ cup heavy cream 3 scallion, thinly sliced 1/2 cup chopped parsley In a large pot cover the potatoes with water and bring to a boil. Reduce and simmer until they are fork tender. Drain. Meanwhile, while potatoes are cooking; melt 2 tbls butter and the olive oil in a large saucepan.
