Gougères or choux pastry mixed with cheese are extremely versatile. Sweet or savoury this French classic an absolute favourite. I’ve substituted the traditional Gruyère for a smoked cheddar and filled them with a brown butter and date cream and topped them with mortadella and more cheddar. I could eat 10 of these. #gougeres
