One of my absolute favourite fish here in Australia. Murray cod. This one is from one of the best suppliers aqunasustainablemurraycod. Made a pil pil sauce to go with it. A Spanish sauce made with just olive oil, garlic, lemon and a bit of chili and emulsified with fish collagen and fat from the bones and flesh which gives it a rich and velvety consistency. Murray cod has an amazing balance of protein and fat. I find that adding a tiny amount of kuzu starch stabilises the sauce longer with out it splitting.
