Fuel With Fibre Episode 1: Lentil and Edamame Salad 🫛💪🏿🌱
In my view lentils are still the most underrated food out there — a food that’s a source of protein, fibre, and other key nutrients like iron, folate and copper should be taken seriously!
I certainly do — and this salad is fresh, light and packs 20g of fibre per serving as well as 20g of protein.
That’s over 2/3 of your daily fibre dose sorted in a single meal - save this one and give it a try 💾
Ingredients (serves 2):
Salad base:
- 1 ½ cups cooked green lentils
- 1 tbsp vegetable bouillon (or stock)
- 1 ½ cups shelled edamame (steamed)
- 2 cups red cabbage, shredded
- 2 cups white cabbage, shredded
- 1 medium carrot, grated or julienned
- 1/2 red onion, diced
- 1 tbsp hemp seeds (to garnish)
For the tahini dressing:
- 3 tbsp tahini
- Juice of one lemon
- 1 garlic clove, crushed
- 1 tsp maple syrup
- 2-4 tbsp water (to thin)
- Pinch of salt and pepper to taste
