Ingredients
Chicken Katsu
• 1 chicken breast (butterflied, halved, and pounded)
• Salt, paprika, garlic powder (to season)
• 2 eggs (beaten)
• ⅓ cup flour
• Panko breadcrumbs (to coat)
• Oil for frying (or air fry)
Curry Sauce
• 1 tbsp butter
• 1 onion (sliced)
• 1 carrot (sliced)
• 1 small potato (cubed)
• 1-inch ginger + 4 garlic cloves (whole)
• Grated apple (optional)
• 1 tbsp brown sugar
• 1.5 tbsp soy sauce
• 1 chicken bouillon cube
• ¾ cup coconut milk
• Spring onions (green part), red chilies, lemon juice (to garnish)
Spice Blend
• ½ tsp each: turmeric, cumin, coriander, paprika
• ½–1 tsp black pepper
• ⅓–½ tsp garam masala
Instructions
1. Season chicken with salt, paprika, and garlic powder. Dip in egg → flour → egg → panko. Fry or air-fry until crispy. Set aside.
