Recipe below 👇 Ingredients: - Half large sized onion - 2 medium sized tomatoes - 1 capsicum or bell pepper - 1 red chilli - 4 cloves of garlic - 1 tablespoon olive oil - Salt to taste - Black pepper to taste - A handful of fresh coriander Instructions: 1. Cut vegetables and place on a baking sheet. 2. Drizzle olive oil, salt and pepper. 3. Pop the dish into the oven for 12 minutes with broiler on. 4. Take out charred veggies and blend them together with coriander in a chopper/blender. 5. Serve with tortilla chips or hard bread. Can also be used in tacos or burgers.
