This salad is the perfect end of summer treat & a great way to use the last of your summer tomatoes! ⁣ ⁣ What you’ll need:⁣ ⁣ Vinaigrette: salt your tomatoes and set aside in a strainer over a bowl. The strained juice makes the perfect base. Add in EVOO, red wine vinegar, mustard, S$P and mix. ⁣ ⁣ Croutons: cut up stale bread, coat with EVOO and bake ⁣ ⁣ Salad: use your favorite garden tomatoes, cucumbers, peaches, onions, capers and of course creamy Burrata.
