📝🧀 Cheese Chronicles— Ubriacone “The drunken cheese” 🍷💜
A delicious cow’s milk cheese from Veneto, Italy that is bathed in a mixture of local Clinton and Raboso wine, it is then pierced to let the aroma and flavor of the wine permeate the cheese. During the aging process the cheese is hand rubbed with the grape must (the leftovers from wine making) and then covered with grape leaves to prevent molding 🍇
Pairings: the sharpness goes great with mild olives, grapes, bread and not pictured but I’m sure salami too!

The unique look of this this cheese is amazing but I was hoping for a more boozy taste since it’s permeated with wine
