Poached Eggs over Ramp Brodo - essentially my ~classed up~ way of saying chili, garlic and eggs, which who can be mad at? Ramps are either very easy to find or super difficult, so if you need to sub for spring garlic or scallions, it is just as delicious. The stalks and the leaves are used separately, with the leaves cooked with some asparagus to bring out their mellow (almost sweet!) garlicky flavor, and the stalk used as the base of an Aleppo chili broth. Serve on farro - because farro hive assemble 🫡 And I usually don’t cook with ramps because they are an endangered species in the Northeast, but I’m truly no expert on their availability and growing conditions. I just know to forage responsibly you don’t want to uproot the whole plant! These were gifted to me though, and I never want to see them go to waste.
