I had so much fun cooking with my Noa! π
This is my Kosher for Passover edition of Iraqi ARUK. So delicious! Crispy from the outside and fluffy from the inside - exactly like Noa says π

Recipe:
Ingredients:
4 crumbled matzahs
1/2 cup of water
1/3 cup of olive oil
3 eggs
1 zucchini, shredded
1 red onion, shredded
Handful of chopped parsley
3 small boiled potatoes, shredded
1.5 teaspoons of salt
1/2 teaspoon of ground black pepper
1 teaspoon of garlic powder
Avocado oil spray
Method:
1. In a mixing bowl add the crumbled matzahs, water, olive oil, and eggs. Mix it all together.
2. Add the shredded zucchini, red onion, parsley, and shredded potatoes. Mix it all until combined.
3. Place a parchment paper on a baking pan and spray Avocado oil on top.
4. Using a greased ice cream scoop, scoop from the mixture and place it on the baking pan. You should get around 15 large Aruk patties.
5. Bake in a preheated oven on 420F...
