So this weekend I’m making hundreds of fruits inspired petit gateaux for a VIP event that glacedessert has the pleasure of catering for this Sunday. One of them is these pears 🍐. Honestly I love this fruit so much. It’s so versatile and so understated. It pairs well with vanilla, almond, jasmine tea or even other floral notes like orange blossoms or elderflower. This is the first part of 2 videos I’ve made to showcase how quite laborious it is to create these life-like decadent desserts. When we say that each of our cakes is hand-carved, we really mean it. It took days for us to end up with perfectly shaped cakes that lends life to its look. At the end of the day, it is just a cake. But for us, myself specially, it is a form of skilful art. I personally have to do this thousands of times (I’m not exaggerating, the fruits cakes these hands have carved are around those numbers if not more) to be as confident as I am now in recreating them again and again with pleasing results.
