Part 2 of my mum’s Chicken & Prawn Breyani 🍗🍤🍚
Yesterday we shared Part 1: the chicken marinade, and today we’re finishing this incredible breyani. This recipe is so special to our family, and honestly it’s one of the most comforting meals my mum makes. The layers of chicken, prawns, potatoes, caramelised onions, herbs and rice make this dish absolutely unforgettable.

Ingredients
Marinated chicken (from Part 1)
3–4 potatoes, boiled and cut into wedges
Egg yellow (for coating potatoes)
Oil for frying
1 tomato, chopped
1 cup pre-boiled black lentils
2 large onions, sliced
2–3 chillies
A few curry leaves
2-3 cups parboiled basmati rice
Egg yellow (for colour in the rice)
300–400 g prawns, cleaned
Salt and cayenne pepper (to season prawns)
Fresh mint
Fresh coriander
Method
Spread the marinated chicken into a large pot and allow it to cook and brown.
