• 300g green beans, thinly sliced lengthwise
• 1/2 onion, thinly sliced
• 1 tsp sesame seeds
• 8–10 curry leaves
• 1–2 green chilies, sliced
• 1 tsp turmeric
• 1 tsp masala
• 1 tsp ground coriander
• Salt to taste
• 1 medium tomato, chopped
• 1 large potato, diced
• 2–3 tbsp oil
Method:
1. Heat oil in a pot. Add sliced onion, sesame seeds, curry leaves, and green chilies. Sauté until fragrant and slightly softened.
2. Stir in turmeric, masala, ground coriander, and salt. Let the spices bloom for about 30 seconds.
3. Add the green beans, tomato, and potato. Mix well to coat everything in the spices.
