Kali 🤍 (aka Sangiti / stiff, smooth pap)
Kali (also known as sangiti or stiff, smooth pap) is a South African Indian staple, often served with fish curry or tomato-based chutneys.
It’s simple, comforting, and proof that the most basic recipes are sometimes the most loved. My mom was honestly so surprised that so many of you wanted to see this one 🥹
Kali Recipe
Serves 3–4
Ingredients:
2 cups maize meal
4–5 cups water (boiling)
1 tsp salt
Method:
Bring 4 cups water and the salt to a rolling boil.
Slowly sprinkle in the maize meal, stirring continuously with a whisk to prevent lumps.
Once it thickens and becomes too heavy to whisk, switch to a wooden spoon.
If the kali becomes too thick, add a little boiling water and continue stirring.
Cook and stir until smooth, stiff, and fully cooked.
