My Mum’s Madumbi Curry ❤️
A simple, comforting madumbi curry made the way I grew up eating it — warm spices, humble ingredients, and so much flavour. This one tastes like home.
Ingredients:
Oil
1 onion, sliced
2 sprigs Curry leaves
4 Green chillies, slit
1 heaped tsp Ginger & garlic paste
Salt
Ground spices:
1 tsp Turmeric
2 tbsp Bombay Masala
1 tomato, chopped
300 g Madumbis (peeled and soaked in water)
Water
Method:
Heat oil in a pan and sauté the onion, curry leaves, and green chillies until softened.
(Add whole spices here if you have them.)
Add turmeric, masala, salt, and ginger & garlic paste. Cook gently until fragrant, being careful not to burn the spices.
Add chopped tomatoes and cook down slightly.
Add the soaked madumbis and mix well to coat in the spices.
Add water, cover, and cook until the madumbis are perfectly soft.
Serve hot with yellow rice, bread, or roti.
