Gem Squash with Creamy Corn Filling 🇿🇦💛

This South African favourite is filled with a creamy, cheesy corn mixture that’s pure comfort — the kind of food that tastes like home.
It’s my nostalgic twist on a childhood classic, and it’s perfect for cozy winter nights or as a side at your next braai.
Here’s how to make it:
🥬 2 gem squash (or Rondini squash if you’re in Europe)
🧅 1 small onion, finely chopped
🌶 1 green chili, chopped
🧄 1 clove garlic, minced
🌽 1 cup sweetcorn
🥄 1 heaped tsp flour
🥛 ¼ cup cream (adjust for your preferred thickness)
🍅 Tomato slices
🧀 Grated cheese (cheddar or any melty cheese)
🫒 Olive oil, salt & pepper
How to:
1️⃣ Halve squash, scoop out seeds, brush with olive oil, season with salt & pepper.
2️⃣ Roast at 180°C for 20 min until soft.
3️⃣ Sauté onion, garlic & chili, then add corn and flour.
4️⃣ Stir in cream until thick and luscious.
5️⃣ Spoon filling into squash, top with tomato ...
