Here’s the Durban Mutton Curry recipe I used
🥘 Ingredients
• 1kg mutton (on the bone, cut into pieces)
• 4 medium potatoes, peeled & halved
• 2 onions, finely chopped
• 3 tbsp vegetable oil
• 2 tsp ginger & garlic paste
• 2 medium tomatoes, grated
• 2 tsp Kashmiri chilli powder (or Durban masala)
• 1 tsp ground turmeric
• 1 tsp garam masala
• 1 tsp fennel seeds (ground)
• 1 cinnamon stick, 2 cardamom pods, 1 star anise, 1 bay leaf, few curry leaves
• Salt, to taste
• Fresh coriander, for garnish
🔥 Method
1. Heat oil, add whole spices (cinnamon, cardamom, star anise, bay leaf, curry leaves).
2. Sauté onions until golden, then stir in ginger-garlic paste.
