This year's Oregon white truffle haul was mighty in the Chehalem Mountains, and no, our truffle-foraging friend Andrew will not even tell us exactly where he gets them with the help of his trained Italian dogs. He'd prefer to keep this a secret, like this beer, in a sense. There have been only 10 previous batches ever. Since 2015 we have made one and only one batch per year for good reason: the truffles, foraged completely by hand in mid-winter, sometimes amid snow drifts, are only ideally ripe for a few days, so timing is absolutely critical to line up the initial forage, the hazelnut roasting, the infusion, the brew, the aging in secondary, and finally the packaging... there are a million ways we could miss the mark.
