Bún Riêu. This a complex rice noodle originated from Northern Vietnam. A rich and flavorful broth made from tomato and pork bones, seasoned with shrimp paste. And add a touch of complexity with crab miso meat balls. This is served over vermicelli noodles and topped with Vietnamese ham, crab miso meatballls, pork blood cake, and tofu. Yea. Complex to say the least. but man, it is delicious. This aunty has been serving this dish here in this corner off of a local Saigon market in Q3. I love shooting here in the mornings as people are coming through to do their morning shopping and having breakfast themselves.
