Back in 1935, Dr. H.P. Himsworth discovered that it’s not sugar, but dietary fat that causes insulin resistance.
He coined the terms “insulin sensitivity” and “insulin resistance”, and developed the oral glucose tolerance test, a tool still used today to assess how well insulin is working in the body.
In his clinical studies, Himsworth showed that:
• High-fat diets impaired insulin action
• High-carb, low-fat diets improved glucose tolerance and insulin sensitivity
• Patients eating more carbs had better blood sugar control than those on fatty diets
Nearly 100 years later, mainstream nutrition still ignores this!
