This barracuda has finally been the biggest catch of the trip, unfortunately tunas were hiding 😅 but it's been an opportunity to create a new recipe of stuffed barracuda, with local products : sweet potatoes, sweet red pepper, wild crayfish bisque and local chorizo. The fish has been fully optimized cooking all the leftover parts as a tartare with a sauce based on Ponzu, coconut cream, peanut butter and passion fruits.
