Snow Pea and Spicy Tuna Spaghetti Recipe: 1 (16 ounce) package of spaghetti 2 (3.2 ounce) tinned tuna in spicy olive oil 3/4 cup olive oil 6 garlic cloves, sliced 1 shallot, finely chopped 2 teaspoons red pepper flakes 1/2 a bunch of asparagus, chopped Zest of 1 lemon and juice of 1/2 lemon 8 ounces snow peas, julienned 1/4 cup chopped parsley Salt and pepper to taste -Add the pasta to the boiling water and cook until al dente. Reserve 1 1/4 cups of pasta water and drain the pasta, set aside. -In a large high rimmed skillet over medium heat, add olive oil, oil from tuna tins, shallot, garlic and red pepper flakes. Cook for 6 minutes to allow all the flavors to fully combine. -Add pasta water and simmer for 4 minutes. Add the asparagus and allow to simmer for an additional 3 minutes. -Add pasta, snap pease and lemon zest and toss to combine. Add parsley and season with salt and pepper. Toss once again to combine.
