Pickle Tavern-Style Pizza 🥒🥒🥒 This one's for my beautiful wife. It's inspired by the original pickle pizza from eatbobspizza here in Chicago. It starts with a garlic cream sauce base and is topped with shredded mozzarella, shaved mortadella, and kosher dill pickles that I sliced super thin on a mandolin. After a quick bake in my gozney Arc XL it's finished with shredded aged parmesan. I know pickles on pizza seem like a jailable offense to some but trust me this works. The garlic cream sauce pairs well with the mortadella that renders some of its fat in the oven and the pickles balance out that saltiness with the perfect amount of acid.
