✨Almond croissant baked oats… but make them nourishing ✨
This is one of those breakfasts that tastes like cake but is actually packed with goodness and keeps you full all morning.
✨ Serves 6
What you’ll need:�2 ripe bananas�2 eggs�150g Greek yogurt�250ml milk�2–3 tbsp maple syrup or honey�1 tsp vanilla extract
1 tsp almond extract
200g oats�50g ground almonds�1 tsp baking powder�½ tsp bicarbonate of soda
2 tbsp almond butter�Handful of flaked almonds
Method:�Mix the wet ingredients.�Add the dry ingredients and mix until combined.�Stir through the almond butter.�Pour into a baking dish, sprinkle with flaked almonds and bake at 180°C (160 fan) for 25–35 minutes until golden and set (I like to bake until it’s slightly underbaked so that when I reheat it in the morning it doesn’t dry out).
I always serve it warm with Greek yoghurt and berries.
