🇫🇷🛹🪽Skate Wing “Meunière” Many people don’t consider skate (not the generational video game) an “eating fish” because it produces ammonia when mishandled after being caught, and most people’s only experience with it is that unpleasant smell and taste. But skate meunière is a classic because brown butter, lemon, and capers mask any fishiness while complementing the mild, slightly sweet flesh, and the fibrous texture of the wing which soaks up that sauce like a champ.
