Program Overview: I completed the Culinary Arts Essentials program @ecole_ducasse, founded by Chef Alain Ducasse (who held 21 Michelin stars across his restaurants). It’s a ~9 week intensive program with classes 5 days a week (~6–7 hours/day). 2. Class Structure: Every two weeks we rotated into a new module focused on different cuisines, techniques, and concepts. Each module ended with an exam, and the final exam was designing and executing a four-course menu. Each day the chef walks through the recipes at the start of class and then does a demo. You execute each dish at your own station while they provide 1:1 guidance. My cohort had 15 students from all over the world. 3.
