If you want Canh (Vietnamese Soup) but don’t have any local Asian grocery stores near you, no problem! Use whatever hearty leafy greens you can find at your local grocery store, like kale, spinach, bok choy, or on this grocery trip…Country greens…because it was on sale. The sturdy, leafy Country Greens worked for canh, but it took a long time for them to get soft and tender, and they turned out a little more bitter for me. Maybe I needed to cook it some more but I prefer Kale better! To make the canh, I simmered liquid with dried shrimp, seasonings, shallots, and ginger for about 20 minutes. After 20 minutes, I added the country greens and simmered for over 30 minutes until the veggies were tender. Finally, I seasoned the canh to taste and it was ready to eat.
