One of my go-to stuffing recipes!
This goes great stuffed inside of a whole roasted chicken, or is great on its own with crostini. The smokey richness of the Chorizo and hearty white beans really go well together. I forgot to get a clip of the whole onion going in, but you get the idea. Here’s the recipe-
- 1 package of chorizo, can be in the tube or whole links
- 2 cans of Cannelini beans drained
- 1 whole sweet yellow onion lightly chopped
- 1 teaspoon minced or fresh chopped garlic
- 3 tablespoons of sun dried tomatoes with the oil they come in (this really adds a ton of flavor so go more or less oil depending on your taste
- 1 teaspoon of salt
- 3 sprigs of fresh Rosemary
Let everything simmer and if you want it more like a stew you can add a cup of chicken stock. If you want it more like a stuffing don’t add the stock. Right before you pull it off add the Rosemary and cover. Bob appetite!
