Valentine’s Vodka Sauce -1/2 box of pasta -1 shallot -4 garlic cloves, minced -2 tablespoons of butter -4 ounces of tomato paste -1 shot glass of vodka (lol) -1 cup of heavy cream -pasta water -handful of parmesan to taste -salt to taste (usually not needed if you salt the pasta water!) Melt butter over medium heat. Add shallots and garlic and cook until fragrant. Add tomato paste and cook until it gets almost a burnt red color. Add vodka and stir, scraping the bottom of the pan. Add 1/2 cup of heavy cream and mix, let it simmer over medium low until bubbling. Once bubbling add the remaining 1/2 cup of heavy cream and let simmer.
