Yasuaki Saito (who owns thewaylandmill) is also a co-owner of some of my other beloved Seattle spots (postalleypizza saintbreadseattle) It’s surprisingly rare to find a restaurant like this one that excels at every meal, breakfast through dinner (Monsoon or Harry’s Beach House come to mind but not many). Wayland is open 8-3 Sunday to Tuesday, and 8-8 Wednesday to Saturday. Go at an off peak time for a quieter experience. They’re making cozy Japanese food and everything was fresh and wonderfully seasoned…there were a few delightful surprises and ingredient combos I’ve never had (the curry garlic ketchup that comes with the fries 🔥 the gohan butter cookie 🤤). The flavors were on point for everything I ate and made me want to go back to Japan asap!
