I completely messed up drying my garden peppers - so here’s what not to do. If you like me think “this’ll be a fun way to spice things up in the garden!” and decide to dry your hot peppers, you can dry them a few different ways...but if you’re going to string them up like this, it can be kind of risky. It probably didn’t help that after I hung them up to dry I completely forgot about them for like four months so when I took them down I sort of expected disaster - but it was so much worse than I imagined. Basically bigger peppers like these have too much water in them to dry them slowly unless you’re in a really hot and dry climate, so if you don’t cut them open that water gets trapped inside and molds. It probably would have worked better if I had at least cut a small hole in each one before I strung it up. Peppers should be completely hard and brittle, not flexible or bendable, before being stored, and using a dehydrator or oven can ensure they dry fast and evenly. Some of the ...
