Sweet potato biscuits…here’s a recipe for those unused sweet potaoes from the holidays.
1 1/2 cups baked sweet potato
( 1 large potato)
6 tbsp unsalted butter melted
1 cup buttermilk
3 cups all purpose flour
5 tsp baking powder
1/4 tsp baking soda
1 tsp salt
2 tbsp sugar
1 tbsp sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
* Preheat oven to 400F.
* In a large bowl mash sweet potatoes, melted butter and buttermilk. Whisk until smooth.
* Add flour, baking powder, baking soda, sugar, salt, brown sugar, cinnamon, nutmeg abd allspice. Stir just until combined.
* Turn out dough onto a lightly floured surface.
* Knead the dough -7 times, sprinkling with additional flour if it gets a bit sticky.
* Roll the dough out to about 3/4-inch thick and cut with round cutters.
* Place on prepared baking sheet and spread melted butter on each biscuit (and sprinkle with sugar -optional)
*Bake for 15 to 18 minutes or until golden brown and cooked through.
