Steak Salad Sundays Part 87: Holiday caesar-ish steak salad
For the salad:
Sliced steak
Romaine or baby gem lettuce
Garlic herb toasted bread crumbs
Parmesan cheese, grated
Pomegranate seeds
Pistachio parmesan crisps
Pomegranate caesar dressing
Garlic herb toasted bread crumbs: I started by sauteing some minced garlic, chopped herbs (thyme, parsley, sage), and a rosemary sprig in a little olive oil and butter over medium heat for a few minutes, until fragrant and garlic starts to cook. Then I add panko bread crumbs, salt, and pepper, and toast over med/low heat for about 5 minutes, stirring frequently, until toasted and browned.
Pistachio parmesan crisps: Heat oven to 400 F. On a baking sheet lined with parchment paper, add freshly grated cheese and chopped pistachios into little piles. Top with some extra parmesan cheese. Press down on each mound to flatten. Bake for about 6-8 minutes, until they start to bubble and turn slightly golden brown.
