Steak Salad Sunday Part 68: The freshest melon steak salad 🍉🍈🥒 @21stamendment For the salad: Arugala Sliced steak Watermelon cubes Cantelope cubes Persian cucumber Feta, cubed Mint Basil Toasted pepitas Crispy jalapeños Jalapeno lime dressing Jalapeno Lime Dressing: ¼ cup olive oil 1 tbsp champagne vinegar ½ jalapeno 1 tbsp honey 1 garlic clove Juice of 1/2 lime 1 tsp dijon mustard Small bunch of fresh dill Small bunch of fresh parsley Small bunch of green onion Salt and pepper, to taste *Add to a jar and use an immersion blender to blend until nice and creamy. For the pepitas: I toasted over low heat in a little bit of olive oil with a splash of lemon juice and salt until toasted and golden brown.
