It’s built on simple aromatics, bold spice, and high heat to get that golden, slightly crunchy finish. Ideal for quick lunches, minimal prep, and zero waste cooking.
Recipe (serves 1–2):
– 2 cups cooked leftover rice (preferably cold)
– 2–3 tbsp chopped onion
– 1 tsp grated ginger
– 1 tsp grated garlic
– 1–2 tsp masala (Durban-style or any curry spice blend)
– Small handful chopped coriander (optional)
– 1–2 eggs
– 1 cup spinach (or any greens)
– 2 tbsp sliced spring onions
– Oil + salt to taste
Cold leftover rice + chopped onion + ginger + garlic + masala + (optional) coriander.
Mix well. Fry in a hot pan until golden and crisp.
